According to legend, at the end of every rainbow there sits a pot of gold, and anyone that reaches the end of the rainbow can have a chance to claim it from the Leprechaun guarding it. But if ever there were a fool’s errand, attempting this treasure hunt will only leave you feeling unlucky at best and undoubtedly hangry. Don’t be foiled by the science of refraction! We’re here to turn your luck around! You can have your rainbow and your pot of gold if you just follow along with our rainbow and gold coin decorated cookie tutorial below.

Rainbow and Gold Coin Cookie Supplies
- Baked and cooled rainbow & small circular sugar cookies (recipe here)
- Royal icing (recipe here)
- Piping bags
- Round piping tip
- Piping couplers
- Gel food coloring
- Red, orange, yellow, kelly green, teal, violet
- Scribe or toothpick
- Edible gold luster dust
- Food safe paintbrush
- Food safe edible marker
- Lemon Extract
Before you get started you’ll need to bake a batch of sugar cookies. You can get our sugar cookie recipe here where Ally also gives away all of her royal icing secrets.
If you don’t have a small enough cookie cutter to create the bite-sized, gold coin cookies, you can simply take a large piping tip, and use the bottom of the tip to cut out a circle!
Mix all your colors beforehand – this saves you time! Your icing will all need to be medium consistency.
Remember, a little goes a long way when adding gel food coloring to royal icing.
You’ll need to mix a small batch of red, orange, yellow, green, teal, and violet icing. Mix a batch of white royal icing to medium consistency as well.
Begin by piping the white clouds onto your cookies. Use a scribe to fix any imperfections or to get rid of any bubbles. Let harden.
Using an edible marker of any color, mark 5 even spaced lines to create 6 spaces. This will help when determining how large to pipe your rainbow colors.
Ready to pipe the rainbow? Start off at the top of the rainbow with the red icing and pipe a smooth line following the mark that you made.
Wait a few minutes before piping the next color – if you pipe the next line of color right away, the colors will touch and create a seamless line. We want some round definition on each of the rainbow colors.
Now continue going down the rainbow with orange, yellow, green…
Blue, and violet will finish off the rainbow.
Next, use the white icing to create some definition to the clouds. Add some swirly designs.
Next, take your coin cookie and pipe yellow icing on top. Let dry.
Next, take a small amount of lemon extract and mix in some of the edible gold luster dust. Mix well.
Use a food-safe paintbrush and apply the gold mixture onto the top of the coin and let dry.
